excited to introduce Brad Casey, the Head Chef leading Lily, our modern Australian dining experience that surprises.
Brad has spent the majority of his early career working in 5-star Hotels, such as the Hilton Brisbane, with a stint at the Hilton Sydney. For the past five years, he has worked as Senior Head Chef across several of South East Queensland’s premier Hotel venues.
Brad continues his culinary art of highlighting local and seasonal ingredients on the Lily menu by working with local suppliers, and ultimately doing what he does best: injecting heart and passion into each dish.
Celebrating seasonal produce through a menu that surprises and delights, Brad loves the freedom the Hotel awards him in creating exceptional dishes, “I love that the Fitzgibbons’ are so passionate about food and staying ahead of trends by bringing the class and quality of inner-city restaurants into the inner suburbs”.
Located in the heart of one of Brisbane’s favourite original Hotels, Lily Restaurant is a stunning new dining experience at The Glen Hotel. It seats 140 in a relaxed environment that overlooks the venue’s immaculate gardens. The restaurant features fresh white interiors, gorgeous oak tables, banquette seating, and greenery throughout.
Lily is open for lunch Wednesday - Friday & Sunday: 12pm-2pm
Dinner from Wednesday - Saturday: 5.30pm-9pm
Extended festive season trading hours will apply in December.
