The Glen Hotel claims two titles at 2018 Australian Pizza Championships

Brisbane’s own Pizzaiola (Pizza Chef) from Alphonsus Pizza at The Glen Hotel, Jim Parker, has done Queensland proud at the Dairymont Australian Pizza Championships, held at the Food Service Australia Show in Sydney from 26 - 29 May 2018.

Competing against 24 finalists from across the country, Jim was crowned:

- 2018 WINNER of the Dessert category with the Sugar Plum Fairy pizza – Pink lemonade dough, sugar plum sauce, Turkish delight, chocolate cups filled with ice-cream and musk sticks and topped with rose Persian fairy floss.

- 2018 OVERALL RUNNER UP of the Australian Pizza Championships with the Pistachio & Wagyu pizza – Homemade rocket and pistachio pesto, Wagyu beef bresaola, Fior di latte, cherry tomatoes, pistachio crumb, fresh rocket and smoked buffalo mozzarella.

Parker was only narrowly pipped at the post by Mark Paterno of Arte Bianca in Sydney, who was trained in Italy at the Scuola Italiana Pizzaioli by World Champion Pizza Maker Graziano Bertuzzo. Jim has been making pizzas for over 15 years, and his passion and talent for creating tasty and authentic Neapolitan pizzas shows.

 


“The competition allows pizza chefs nationwide to showcase their most tasteful pizzas across five categories – seafood, meat/poultry, vegetarian/gluten free, sponsor's product and dessert,” said Jim.

“Competition entries can be an exotic twist on an old favourite, or a completely original creation, with the final product judged by an internationally recognised panel of chefs on the creation’s originally, balance, creativity and excitement factor. For my dessert entry, I created an original pizza inspired by fairy floss – the pink lemonade dough took two to three months to perfect alone!”

The Glen Hotel co-owner, Cathy Fitzgibbons praised Jim for his inspired, left-field recipes, which helped the passionate pizza chef gain two national titles.

“We are excited and very proud to be awarded this year’s title of Best Dessert Pizza and runner up of overall. Our specialist Pizzaiolo, Jim, has competed in, and won, many pizza challenges over the years, and it is an incredible honour to be rewarded for your passion!”
