And this week, that belief was officially recognised on Queensland’s biggest hospitality stage.

We’re incredibly proud to share that our very own Executive Chef, Brad Casey, has been named Queensland’s Chef of the Year at the 2025 Queensland Hotels Association Awards for Excellence.

It’s an honour that celebrates not only Brad’s personal dedication to his craft, but also the evolution of what great pub food can be.

From Eight Mile Plains to State-Wide Recognition

Brad was up against chefs from some of the most exclusive luxury venues in the state, from W Hotel and JW Marriott to Spicers Hidden Vale. To see our southside local chef take out the top honour is a huge moment not just for Brad, but for our entire Glen Hotel community.

If you’ve ever dined with us, you’ll know that Brad’s touch is on everything that leaves our kitchen. From fresh, seasonal restaurant dishes to our beloved Neopolitan Alphonsus pizza, indulgent donuts and beautifully executed large-scale function menus. He leads a team that serves more than 5,000 meals every week, and does so with a commitment to consistency, creativity, and care.

What sets Brad apart goes beyond what’s on the plate. As owners Brian and Cathy Fitzgibbons shared when nominating him for the award, Brad is a true leader in the kitchen, mentoring young chefs, nurturing a positive team culture, and always striving to make casual dining something memorable.

He shares our vision of delivering an elevated pub experience that’s approachable, family-friendly, and full of flavour. Whether you’re grabbing a quick midweek meal or celebrating a milestone event, Brad’s aim is always the same: make it exceptional.
